Girl's Night In

My three dear friends just left after a fabulous evening filled with food, fun, and laughter. Every month or two, the four of us get together at each other's homes. We use to teach together, but now are all at different schools. It's funny how we became such good friends. Two girls are in their early thirties and the other "girl" and myself are in our early fifties. We have been friends now for over ten years. We've supported each other through marriages, births, divorces, miscarriages, and even cancer. The age-gap is irrelevant. We enjoy each other's company and love to laugh together, often venting about life's circumstances.

Tonight was my turn to host. So first I cleaned my house (not a requirement but I enjoy entertaining in a sparkling clean house). Then I prepared the meal. We began our evening with mango margueritas and cold vegetables and dip. Then we had chicken fajitas, brown rice, strawberry romaine salad with raspberry vinagrette, and green beans with walnuts. I meant to take a picture but forgot. After we had coffee but no one had room for dessert, which would have been mango sherbet and blueberries. We ate outside in the gazebo and it was a beautiful summer evening.

Later we went in the outdoor hot tub. We had so much fun. Getting together with the girls once a month is definitely something I look forward to.
